Delicious! I poached my chicken breasts in 3 cups of chicken broth with Goya Adobo seasoning and red pepper strips. I used a 14 oz package of Goya Spanish Yellow Rice mix (and the 3 cups of broth). Added 1/4 cup olive oil, poured over the chicken pieces. Chicken was a little dry but rice was perfect. I might try shredding the chicken a little bit next time before baking.

I tweaked a bit as I made these for my son and his girlfriend. They both are vegetarian and also “clean” eaters. I used coconut sugar in place of white sugar and had raw cashews so used them. Also they’re gluten free so used gluten free brown rice crisp. The only powdered sugar I had was swerve brand. And just enough for most of the balls. But to be honest delicious without the sugar coating! Made exactly 2 dozen (I did try one)PS: first squeeze the “balls” to stick well then you can roll into balls
So easy and incredibly tasty! I followed the recipe as written - used 1 cup of hand-chopped dates (from plump and juicy dates that still had the pit (I took the pit out, of course!)) and added 1/4 teaspoon salt.When the mixture first came off the heat and was still warm, they would NOT stick together in balls. Once cooled to around room temperature, they rolled easily into balls. used #60 scoop. made just over 3 dozen.
I love this recipe! Just used it successfully for the third time and the balls stuck together well and are wonderful. I think it's more important to heat the mixture until ALL the sugar granules dissolve than melting the dates, the type used or scaling back the amount of crispy rice cereal. Mine have all held together well per the directions given, especially after the balls have chilled.
I experienced frustration when the mixture would not adhere and form balls. I set it aside. I used some butter and marshmallows to finish before this went into the garbage. I will brush with powdered sugar. Too many rice krispies at 3 cups...scale down!

I made this in my toaster/convection oven, on a foil-lined baking pan. It was done in about 6 minutes. I squeezed a wedge of fresh lemon juice over the fish after cooking. It was delicious! It surprised me that I really couldn't tell that soy sauce or butter was part of the recipe. It was a great combination!
Best way to cook turkey ever! I made this for Thanksgiving one year because there were just two of us. It was the most juicy and flavorful turkey ever. No risk of drying out like oven roasted turkey breast. Also, it' so easy!!
I substituted soy sauce for the worcestershire sauce. Very good!
